The authors measured the surface of the tongue. Where coating showed, the grooves between the bumps ran deeper. What sits down in them is what a scraper rides over.
Thirty people, four separate mornings. A tongue cleaner cut the smell producing gases by 42%, a scraper by 40%, a toothbrush by 33%. But the researchers could not detect a significant drop past 30 minutes in a single subject.
The bacteria sit inside a sticky matrix they build themselves. In the authors’ own words, it protects them against chemical and physical attack, and it makes the plaque hard to clear.

You already scrape your tongue, and you're right, that's where most of the smell comes from. And it works. The gunk comes off and your breath smells better.

🪥Why a tongue scraper isn't enough
Your tongue isn't flat. It's like shag carpeting down there. Ever tried cleaning a shag carpet with a broom? You get the surface. What's packed down in there stays put.
And pushing harder makes it worse. A raw tongue gives that gunk even more to hold onto.

Down in those cracks, the bacteria are covered. They build a sticky shield over themselves. It has a name. Biofilm.
Researchers put a number on what that shield buys them. Under it, bacteria can hold out against an antimicrobial up to a thousand times better than the same bacteria out in the open.
